Jowar flour
ज्वार का आटा · ಜೋಳದ ಹಿಟ್ಟು
Flours
Bhakri and roti.
What to know
Gluten-free like bajra, so bhakri is patted out with a wet palm, never rolled.
- Choosing it
- Buy it in small quantities and as freshly ground as you can. Stone-ground flour from a chakki drinks noticeably more water than packet flour, which is why the same recipe behaves differently between the two.
- Storing it
- Airtight, and in the fridge past a month. The germ is left in, so it goes rancid far sooner than maida or atta — flour that smells sharp or faintly of paint has turned and no amount of kneading will hide it.
Measures
- 1 cup ≈ 105 g
- 1 tbsp ≈ 8 g
Cups here are the Indian 200 ml cup, not the 240 ml US cup — a common reason a recipe does not work. Weigh where you can; the grams are the figure we cook to.
