The small crisp wheat disc under sev puri and dahi puri, and crushed into bhel for a shatter that sev on its own cannot give.
What to know
It softens within a minute of meeting chutney, so it is crushed in at the table rather than mixed ahead.

- It should snap. One that bends has taken on moisture and will be leathery in the bowl.
- Storing it
- Airtight, away from anything damp.
