The fizz in shikanji, jaljeera, masala soda and every lemon cooler sold from a cart.
What to know
It goes flat the moment it is stirred hard or poured from a height, so it goes in last, down the side of the glass, with one gentle lift of the spoon.
- Storing it
- Chill before opening; a warm bottle loses its fizz as soon as the cap turns.
- If you cannot get it
- Plain carbonated water. Tonic water is not a substitute — it is sweetened and bitter with quinine.
