Cottonseed oil (kapasia)
बिनौला तेल · કપાસિયા તેલ
Oils & Ghee
Gujarat's everyday frying oil, though it is usually bought inside a blend rather than on its own.
What to know
Mild and slightly nutty when filtered, and indistinguishable from any other neutral oil once refined. Worth knowing mainly because a great deal of Indian blended oil is largely this without saying so on the front of the tin — if a recipe from a Gujarati kitchen says just oil, this is often what was meant.
- Choosing it
- Sold as kapasia in Gujarat. Elsewhere you will mostly meet it as an unnamed component of blended cooking oil.
- Storing it
- Cool, dark, sealed.
- If you cannot get it
- Try: groundnut oil, sunflower oil
Measures
- 1 tsp ≈ 4.5 g
- 1 tbsp ≈ 13.5 g
- 1 cup ≈ 180 g
Cups here are the Indian 200 ml cup, not the 240 ml US cup — a common reason a recipe does not work. Weigh where you can; the grams are the figure we cook to.
