Dried oregano
Ground Spices
The herb in the sachet that arrives with a pizza — garlic bread, tomato sauces, anything in that idiom.
What to know
Dried oregano is stronger than fresh and needs fat and a little warmth to open up. Rub it between your palms as it goes in; crushing the leaf is what releases the smell.
- Choosing it
- Grey-green leaf rather than brown dust. A jar with no smell when you open it has none to give the food.
- Storing it
- Airtight, dark, and used inside a year.
- By eye
- 1 tsp ≈ what comes out of one pizza-delivery sachet
Measures
- 1 tsp ≈ 1 g
- 1 tbsp ≈ 3 g
Cups here are the Indian 200 ml cup, not the 240 ml US cup — a common reason a recipe does not work. Weigh where you can; the grams are the figure we cook to.
