Flours
Softness and stretch — naan, bhatura, samosa pastry — and the binder in thin batters.
What to know
Finely milled and stripped of bran and germ, so it takes water slowly and stretches where atta tears. That is why it is the flour for anything that has to be rolled thin or fried puffed — and why a dough made with it needs a longer rest than a chapati dough.
- Storing it

- If you cannot get it
- Plain or all-purpose flour is the same thing. Atta will work as a binder but makes the result heavier and darker.Try: atta

Cups here are the Indian 200 ml cup, not the 240 ml US cup — a common reason a recipe does not work. Weigh where you can; the grams are the figure we cook to.
