Pantry
Masala toast, bread upma, and every grilled sandwich sold off a Bombay cart.
What to know
A day-old loaf grills better than a fresh one. Very fresh slices tear when you spread a filling on them and go limp under anything wet.
- Choosing it
- Press the packet — it should spring back rather than stay dented. Whole wheat and multigrain loaves are usually softer and sweeter than the label suggests; if you want a sturdier slice, buy the plain white and toast it harder.
- Storing it
- Sealed, at room temperature, used within about three days. Freeze rather than refrigerate if it has to keep longer — slices toast straight from frozen.
- Allergens
- gluten

Cups here are the Indian 200 ml cup, not the 240 ml US cup — a common reason a recipe does not work. Weigh where you can; the grams are the figure we cook to.
